      Crop nutrient density is falling, and weight-loss drugs may be what finally makes the food chain pay to reverse it, according to a new report from venture firm Deep Science Ventures.

      The report, Hollow Harvests, blames decades of breeding for yield, fertilizer regimes that build biomass faster than mineral uptake, and continued soil degradation.

      Its scenario modeling looks at the United Kingdom. If GLP-1 use reaches 15% of adults and crop nutrient density drops a further 15%, about 5 million working-age adults could fall below safe intakes of selenium, potassium and iron.

      The firm also cites estimates that elevated carbon dioxide could cut wheat protein by up to 12.7% and zinc by 36.5% by 2050.

      Senior associate Will Summers told AgFunderNews that food companies now have to compete on nutrition per calorie, which could push value upstream to growers and breeders.

      On farm practice, Summers said soil health matters more than the label. He pointed to paired farm trials in which better soil health lifted nutrient levels by 10% to 35%, and warned that genetics or fertilizer practice can undo those gains. Separate modeling suggests most soils sit far below their carbon capacity.

      Summers said cheaper measurement, including hyperspectral imaging, is the first step toward paying growers for nutrient density.

      Crop nutrient density: key questions answered

      Deep Science Ventures points to three causes: decades of breeding for yield over nutrient content, fertilizer regimes that boost biomass faster than mineral uptake, and continued soil degradation. It notes that a third of the world’s soils are already degraded.

      People on GLP-1 drugs eat fewer calories, so each calorie has to carry more nutrition. The report argues this forces food companies and retailers to compete on nutrition per calorie, creating a commercial reason to value nutrient-dense ingredients.

      In the firm’s UK scenario, GLP-1 use at 15% of adults combined with a further 15% fall in nutrient density would leave around 5 million working-age adults below safe levels of selenium, potassium and iron. This is a scenario, not a forecast.

      Will Summers of Deep Science Ventures said organic production does not correlate with nutritional quality, while the evidence for practices that improve soil health is stronger. He cited paired farm trials showing 10% to 35% uplifts across a set of nutrients, but said genetics or fertilizer practice can cancel the benefit.

      Measurement. Summers said tools such as hyperspectral imaging for vegetables and antibody-based tests for cereals are making nutrient testing cheaper and more scalable. He also suggested governments could set baseline nutrient targets for new crop varieties.
